Tahini and Honey Chicken with Sweet Potato and Hummus Mash

A Middle Eastern inspired take on the classic roast chicken. Perfectly tender chicken and velvety mashed sweet potato, served on a Le Creuset Platter Lid, topped with roasted chickpeas and fresh herbs.

INGREDIENTS

  • 10 free range chicken drumsticks
  • 3 Tbsp (45ml) olive oil
  • 2 Tbsp(30ml) tahini
  • 3 Tbsp (30ml) honey
  • 1 Tbsp (15ml) apple cider vinegar
  • 1 Tsp (5ml) smoked paprika
  • 2 Tsp (10ml) ground cumin
  • 1 Tsp (5ml) chilli flakes
  • 1kg sweet potatoes, evenly chopped

METHOD

Place all the marinade ingredients into your Le Creuset Rectangular Dish and mix. Then add the chicken and cover with the Le Creuset Platter Lid and allow to marinate for 30 minutes. At this point preheat your oven to 180°C.

Remove the Platter Lid and place the Rectangular Dish in the oven for 40 minutes. After 20 minutes, turn the chicken and allow to cook for the remaining 20 minutes until golden.

While the chicken roasts, boil the sweet potato in salty water until soft. Drain the water and mash. Combine the mash with the hummus, cream and seasoning.

Serve the mash potatoes and chicken on the Platter Lid. Top with roasted chickpeas and your choice of herbs.
