Spiced Lamb Chops
INGREDIENTS
- 4 lamb chops
- ½ cup plain yogurt
- A handful of fresh coriander
- 60ml lemon juice
- 60ml honey
- 5ml paprika
- 5ml olive oil
- Salt and Pepper
- Your choice of vegetables for the kebabs
METHOD
On a platter, season the lamb chops with salt and pepper.
Add olive oil to a pan and brown the lamb chops, 2 minutes per side.
Make the marinade:
In a Le Creuset Signature Buffet Casserole, on medium heat, add the yoghurt, lemon juice, honey, coriander and paprika. Season with salt and pepper. Let the marinade simmer until it starts reducing and becoming thick.
Place the lamb chops in the marinade, and let it cook on a low heat for 4-5 minutes.
Vegetable Kebabs
You can use any vegetables (butternut, zucchini, red onion and red pepper) you prefer, dice and put them on a wooden skewer.
Place the vegetable kebabs on a platter. Lightly season with salt and pepper.
Grill the vegetable kebabs in a Le Creuset Grill.
