INGREDIENTS
- 1 cup dry orzo pasta
- 1 small red onion diced
- ½ cup coconut milk
- 2 tbsp nutritional yeast
- Juice of one small lemon
- 1 tsp oregano
- 1 tsp dried thyme
- 1 crushed garlic clove
- 1 tsp dried thyme salt and pepper to taste
METHOD
Boil some water with a bit of oil and a pinch of salt.
Once the water is boiling, add in the pasta and cook according to the packet instructions.
Fry the red onion in olive oil, add in the garlic and the spices.
Once the pasta has cooked, drain, leaving a bit of the pasta water behind in the pot, add in the fried onion and spices, coconut milk, nutritional yeast, lemon juice, salt and pepper.
Let it cook a few minutes more, serve with fresh herbs.
