INGREDIENTS

  • 2 tsp olive oil
  • 1 red salad onion, chopped
  • 2 tsp crushed garlic
  • 1.25 kg extra-lean beef mince
  • ¼ cup lemon juice
  • ¼ cup raw honey
  • 1 tsp ground cloves
  • 1 Tbsp salt
  • 1 Tbsp curry powder
  • 2 tsp ground turmeric
  • 5 bay leaves, finely crushed
  • 100 g raisins
  • 2 eggs, whisked
  • 6 eggs
  • 1 cup unsweetened almond milk
  • 3 whole bay leaves

METHOD

Preheat the oven to 180 °C and spray an ovenproof dish with non-stick cooking spray.

Heat the olive oil in a large frying pan and fry the onion and garlic until golden brown.

Add the mince and fry until browned, then remove the pan from the heat.

Add the lemon juice, honey, spices, raisins and whisked eggs to the mince. Stir well.

Place the mince mixture in the greased dish and compact with a large spoon.

Beat the 6 eggs and almond milk in a mixing bowl and pour over the mince.

Finish off with the whole bay leaves and bake for 40 minutes or until the egg is set.
