Grilled Pork Kebabs on Rice Noodles

INGREDIENTS

  • 500g Pork Mince
  • 1 tbsp. mild curry spice
  • 4 spring onions, finely sliced
  • 3 tbsp. olive oil
  • 250g thin pasta noodles
  • 1 red pepper, deseeded and finely chopped
  • 6 tbsp. finely chopped fresh coriander
  • Juice of 1 lime

METHOD

Preheat the oven to a grill oven setting at 190°C.

Place the mince in a bowl with the spring onion and curry powder. Mix well with your fingers. Divide the mixture into 21 portions and shape into small balls. Thread 3 balls each onto 7 skewers.

Lightly brush the balls with 1 tablespoon oil and place in the oven for 15-18 minutes, turning once until browned and cooked through

Meanwhile prepare the noodles according to packet instructions, drain and place in a warm bowl, drizzle with the remainder oil. Stir in the red pepper and coriander. Add the lime juice, season and toss to mix well.

Place the noodles into a Le Creuset Oval Serving Platter and top with skewers of the grilled pork.
