Christmas Tree Brownie Pops

INGREDIENTS

Ingredients for the brownies:

  • 1/2 cup canola oil
  • 1 ¼ cups white sugar
  • 3 vegan eggs (either a flax egg or a using egg replacer)
  • 1 tbsp vanilla extract
  • 1 cup cake flour
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • pinch of salt
  • 60g vegan dark chocolate chips

For the Icing and decorating:

  • 1 tin of Pillsbury vanilla icing (accidentally vegan) in a piping bag
  • a few pretzel sticks
  • Sprinkles to decorate
  • Optional icing sugar for dusting

METHOD

Preheat oven to 180°c  and line a Le Creuset baking tray with baking paper.

In a bowl, make your vegan eggs (according to box instructions or for a flax egg: combine 3 heaped tbsp flaxseed meal with ½ cup water or unsweetened non-dairy milk. Let rest for 10 minutes to thicken)

In another mixing bowl, add the oil and sugar and mix well.

Add in the “eggs” and vanilla, mix again.

Add in the flour, cocoa powder, baking powder, salt and chocolate chips mix well to combine.

Pour into the baking tin and bake for 25 – 30 minutes.

Allow to cool slightly then cut into triangles and insert the pretzel stick into the bottom part.

Once cooled completely, pipe the icing onto the brownie and decorate with some sprinkles and dust with optional icing sugar.
