A South African favourite. This deliciously spicy Chakalaka is the perfect addition to any meal!

INGREDIENTS

3 Tbsp oil

1 large onion, cut into chunks

½ of each red, yellow and green pepper, cut into chunks

1 tsp garlic, crushed

1 tsp chili powder

2 tsp curry powder

2 tsp turmeric powder

2 tsp vegetable seasoning

4 large carrots, grated

Salt and pepper to taste

1 x 410 g can baked beans

1/4 cup tomato sauce

Fresh coriander, to garnish

METHOD

Heat oil in a Le Creuset Toughened Non-Stick Wok on medium heat. Add the onion and peppers and gently cook until soft – about 3 minutes.

Next, add all the spices and cook for 1 minute or until fragrant. Add garlic and cook for another minute. Once fragrant, add the carrots and cook until soft and tender. This takes about 8 minutes.

Lastly, add the baked beans, tomato sauce, salt and pepper and stir to combine. Simmer the mixture for a further 5 minutes. Garnish with coriander to serve.
