INGREDIENTS
- 4 cups cherry tomatoes
- 2 cloves garlic, chopped
- ½ tsp salt
- 2 -3 rounds of feta cheese
- 4 tbsp olive oil
- 6 cups cooked pasta
- Small handful fresh basil
METHOD
Preheat the oven to 180 degrees Celsius. Place the cherry tomatoes into a Le Creuset Signature Roaster with the garlic, salt and half the olive oil and mix.
Place the rounds of feta into the roaster between the tomatoes and bake for 20 minutes until the tomatoes are bursting and the feta slightly golden.
Remove from the oven. Mix the feta and mash the tomatoes until you have a creamy tomato sauce. Add the cooked pasta with a little pasta water and mix well. Finished with fresh basil torn into the pasta and serve.
