Vegan Spinach, Mint and Chilli Pizza

A colourful and satisfying vegan pizza, with a spicy kick from the chilli.

INGREDIENTS

Ingredients for the base:

  • 3 cups flour plus 1/3 cup
  • 1 1/3 cup of water
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 sachet yeast

Tomato sauce:

  • 70 g tomato paste
  • 240 g tomato purée
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Cheese:

  • 50g cashews soaked in boiling water for 15 minutes
  • 1 tin of coconut cream
  • 2 tablespoons cornflour
  • 3 tablespoons nutritional yeast
  • Juice of half a lemon
  • Salt and pepper to taste

Toppings:

  • 2-4 red eye chilies chopped with or without the seeds mixed with 3 tablespoons of olive oil
  • 80 g of baby spinach chopped
  • 8g of fresh mint chopped

METHOD

To make the base:

Add all your dry ingredients to your mixing bowl. Add in the wet ingredients and mix until a dough forms.

Flour your surface with a good amount of flour to knead your dough.

Knead the pizza dough for 5-10 minutes until it becomes shiny.

Place back into your mixing bowl and allow to rise slightly for 30 minutes while you prepare the rest of your ingredients.

To make the tomato sauce:

Add all of your ingredients into your mixing bowl and mix.

To make the “cheese” sauce:

Drain the cashews. Add all the ingredients to your blender and blend until smooth.

Pour the mixture into your pot and cook through on the stove for 5-10 minutes until the sauce has thickened.

Start with the bases now.

Preheat your oven to 180 degrees Celsius.

Divide the pizza dough into 3 roughly equal balls. Roll out one of the balls until you have the desired thickness.

Using your Le Creuset basting brush, brush about 1 tablespoon of olive oil onto your base.

Place onto your Le Creuset Pizza tray and allow to bake for a short 8 minutes while you prepare your toppings to add to the pizza.

Once your base has slightly cooked through, spread 2 tablespoons of your tomato sauce mixture evenly on the base.

Place the desired amount of cheese sauce onto your pizza.

Spread some of the chili mix, mint, and spinach, and a dash of salt and pepper and place in the oven to bake for 15 minutes, until your base is nice and crispy.

Repeat with the remaining pizza dough. Serve with some more fresh spinach and mint and enjoy.
